  • 2 courgettes, coarsely grated
  • 150g pack garlic & herb soft cheese (such as Boursin)
  • 185g can tuna in spring water, drained and broken into flakes
  • 140g ready-roasted peppers, sliced into strips
  • 1 tbsp capers in brine, drained
  • 8 pitted black olives

Instructions

  1. Step 1: Preheat your oven to 220°C (200°C fan)/gas mark 7. Unroll the puff pastry onto a large baking sheet lined with baking parchment. Use a sharp knife to score a 1cm border around the edges without cutting through the pastry. Prick the area inside the border all over with a fork. Bake the pastry for 15 minutes.
  2. Step 2: While the pastry bakes, heat olive oil in a frying pan over medium heat. Add the grated courgettes and cook until tender and the mixture is fairly dry. Remove from heat and let cool slightly, then mix with the garlic and herb soft cheese.
  3. Step 3: Take the pastry out of the oven and gently press down any puffed-up areas inside the scored border using the back of a spoon. Spread the courgette and cheese mixture evenly over the pastry base.
  4. Step 4: Scatter the flaked tuna evenly over the courgette layer. Arrange the roasted pepper strips on top, then sprinkle on the drained capers. Dot the tart with the black olives.
  5. Step 5: Return the tart to the oven and bake for a further 15 minutes, or until the pastry is golden, puffed, and cooked through.
