  • Mashed potato or leftover roasties, to serve

Instructions

  1. Step 1: Heat the oven to 220°C/200°C fan/gas 7. Place the carrots, parsnips, and onion in a deep baking dish or casserole. Toss with the olive oil, season well, and roast for 20 minutes.
  2. Step 2: Add the pigs in blankets to the vegetables and roast for another 10 to 15 minutes, until the bacon starts to crisp.
