6 Ingredient Peach Magic Cookies Recipe

  • Author: Jake
  • Total Time: 25 minutes
  • Yield: About 16 cookies 1x

Description

These 6 Ingredient Peach Magic Cookies are a delightful blend of crunchy and sweet with the natural flavor of peaches, shredded coconut, pretzels, and oats. Easy to make and perfect as a snack or dessert, these cookies feature a sweet condensed milk base and a touch of peach jam for a fruity finish.

Ingredients

Scale

Dry Ingredients

  • 1 1/2 cups unsweetened shredded coconut
  • 1 1/2 cups salted mini pretzel twists, crushed
  • 1 cup quick cooking rolled oats

Wet Ingredients

  • 1 cup chopped peaches
  • 1 can (14 ounces) sweetened condensed milk
  • 1/3 cup peach jam

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Mix Ingredients: In a large bowl, combine the shredded coconut, crushed mini pretzels, quick cooking oats, and chopped peaches. Pour in the sweetened condensed milk and mix thoroughly until all ingredients are evenly combined and form a sticky dough.
  3. Shape Cookies: Using a spoon or cookie scoop, scoop out mounds of dough about 3 tablespoons or just under 1/4 cup each onto the prepared baking sheet. Use your hands to gently push any loose bits back into the dough mounds to help them hold shape.
  4. Add Peach Jam: Spoon approximately one teaspoon of peach jam over the top of each cookie mound. Optionally, gently press a whole mini pretzel on top of each for extra crunch and decoration.
  5. Bake: Bake the cookies in the preheated oven for 12 to 15 minutes, or until the tops are golden brown and the cookies look set.
  6. Cool and Serve: Remove the baking sheet from the oven and let the cookies cool for 5 minutes on the sheet to fully set before serving. Enjoy warm or at room temperature.

Notes

  • Use quick cooking rolled oats for the best texture; regular oats may make the cookies denser.
  • You can substitute peach jam with apricot or any other fruit jam of your choice.
  • These cookies keep well stored in an airtight container at room temperature for up to 3 days.
  • For a less sweet version, reduce the sweetened condensed milk by 1/4 cup and add a bit more oats.
  • Crushed salted pretzels add a nice salty contrast but can be omitted for a gluten-free version if you use gluten-free pretzels.
